Couscous Carrot Salad


  • 2 cups couscous, cooked
  • 1 cup small diced carrot, fully cooked
  • 1/2 cup Italian parsley, roughly chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons chives, thinly sliced
  • 2 tablespoons olive oil
  • 6 pumps Monin Basil Concentrated Flavor
  • 2 teaspoons fresh lemon juice
  • Salt and pepper to taste

  • Yield: Approximately 4 Cups
  • Garnish: Carrot


Place all ingredients (minus salt and pepper) into a large mixing bowl. Fold gently to incorporate. Season to taste. Keep chilled for service.
