It all started with one brown sugar boba outlet in Taiwan in 2017. Two years down the line, the boba trend has erupted across global borders. Milk tea wasn’t new to the culinary scene, but the swapping of white sugar to brown was a change that turned what had been a customer delight into a consumer craze.

THE RULE OF THREE
Unlike the traditional tapioca pearls of past, the craze involves a methodical process which ensures thorough flavour within its boba pearls, all with three simple ingredients. The tapioca pearls are cooked on low heat in brown sugar syrup to absorb the syrup’s smokey, caramel flavour. After that, they’re topped off with cold fresh milk to attain the perfected cup of boba milk tea, streaked down the sides.

SALTED CARAMEL LATTE WITH BOBA
Ingredients
- 20 ml MONIN Salted Caramel syrup
- 180 ml milk
- 80 grams boba
Preparation
- Combine ingredients in a glass filled with ice
- Top with milk

LYCHEE MILK TEA WITH BOBA
Ingredients
- 15 ml Le Fruit de MONIN Lychee
- 20 ml MONIN Green Tea concentrate
- 180 ml milk
- 80 grams boba
Garnish
- Milk foam
Preparation
- Combine all ingredients except for boba in a shaker
- Shake with ice
- Add boba to glass
- Pour shaken mixture over boba
- Scoop milk foam over top

BOBA-COLADA
Ingredients
- 20 ml MONIN Pina Colada syrup
- 20 ml MONIN Green Tea concentrate
- 30 ml dark rum
- 150 ml milk
- 80 grams boba
Garnish
- Chocolate powder
Preparation
- Combine all ingredients except for boba in a shaker
- Shake with ice
- Add boba to glass
- Pour shaken mixture over boba
- Sprinkle chocolate powder on top
